Even the humble saucisson can become a luxury item when black truffles are included. This is made from natural casing, as it should be, and this dry sausage combines all the virtues: without any nitrites, dried in the open air, made in an artisanal and traditional way.

The Montalet natural dryer is ventilated by the constant breeze from the Lacaune mountains, famous for centuries for the excellence of their cured meats. The excellence of the drying is distinguished by the uniform texture of the sausage, very dry from the surface to the core and yet soft to the bite. The characteristic flavour of the black truffle permeates this sausage down to the smallest of its slices, giving a festive and wintery touch.

This sausage won the title of 2022 French champion in the “Public Prize” category at the French Saucisson Championship.
