Made using high quality local pork, this saucisson is encased in natural pigs intestine. Hand made in the Pilat Natural Park, this sausage is dried using fresh mountain air which surrounds the drying rooms. Expert affineurs ensure the sausages develop their flavour over 6 to 10 weeks depending on the season. The fungus coating which develops during the aging process adds richness to the flavour.

Maison Duculty has a long tradtion of charcuterie making. Since 1816 the family has made exceptional dried sausages relying on high quality pork meat from local farmers, but also an unchanged ancestral recipe and natural drying process thanks to the fresh air of the Pilat Natural Parc in the Rhônes-Alpes. Today the company is owned by Gaëtan Duculty, the fifth generation to lead the family business.
