This cured duck breast from the Périgord Noir is covered with a generous amount of pepper and left to dry. Let it come to room temperature, slice it in thin slices and feel it melt on your tongue!

Since 2000 the Périgord foie gras has received and PGI (Protected Geographical Indication) ensuring that all ducks are raised and prepared in the region.
